East Clay Subway work to ramp up in January

Work on the unfinished Subway sandwich shop planned on East Clay Street should restart in January and three more stores could open in the same retail center by late March, its developer said.
Cold weather has stopped construction and pipe installation in the empty strip center, said Ketan Desai of Jackson-based KVS Enterprises Inc., which owns the Subway location on Pemberton Square Boulevard. It would be the sandwich chain’s seventh location in the city and eighth countywide.
To open next door once Subway nears completion will be frozen yogurt shop Fruitwork, a liquor store and a nail salon, Desai said.
The building sits on 1.2 acres next to Wendy’s in front of the U.S. Army Corps of Engineers Vicksburg District headquarters. Wendy’s opened its location on the tract in 2011. Maxwell’s Restaurant operated on the same site for four decades until it closed in 2005.
The store would join Subway locations on Pemberton, inside Walmart at 2150 Iowa Blvd., inside Kangaroo convenience stores at 3060 Indiana Ave. and 1775 Washington St., inside an Exxon gas station at 1215 Mission 66, a freestanding store at 4303 U.S. 61 South, and inside Bovina Grocery, 401 Tiffintown Road.
