Bacon Wrapped Dates

Ingredients

12 pitted dates

4 slices bacon

Honey

Instructions

Cut each strip of bacon into three even pieces. Wrap dates in bacon and secure with a toothpick. Bake on lined sheet pan at 350 degrees for 10 minutes, flip and bake 10 more minutes, until bacon is cooked. While warm, arrange on a plate and drizzle with honey.

 

Basil Shrimp Skewers

Ingredients

1 pound jumbo shrimp, peeled and deveined

Olive oil

Tony Chachere’s seasoning

Fresh basil to garnish

Instructions

Use 2 six-inch, thin bamboo skewers for each skewer of three shrimp. Season with Tony’s or the seafood/Cajun seasoning of your choice. Grill on a grill pan or outdoor grill over medium heat until shrimp are done, 2-3 minutes on each side. Drizzle with olive oil and garnish with chopped basil.

 

Olive and Prosciutto Crostini

Ingredients

Baguette or Ciabatta bread

Olive oil

Olive tapenade

Prosciutto, chopped

Manchego, shaved

Instructions

Slice bread on a heavy bias and toast with olive oil on a griddle or in the oven. Top toast with tapenade, prosciutto, and shaved Manchego. You can use other cured meats and cheeses to change the flavor.

 

Caprese Kebobs

Ingredients

Baguette or Ciabatta Croutons (homemade)

Ciliegine Mozzarella

Grape tomatoes

Fresh basil

Instructions

On large toothpicks skewer tomato, crouton, basil, and mozzarella. Season with salt and pepper or a drizzle with balsamic reduction.

 

Roasted Fingerlings with Aioli

Ingredients

Fingerling potatoes cut in half lengthwise

Bacon grease or olive oil

Minced garlic to taste

Salt and pepper to taste

Aioli for dipping, store bought or homemade

Instructions

Toss potatoes in with garlic and spices in oil. Place cut side down on a non-stick baking tray. Bake at 350 degrees until potatoes are crispy and fork tender.
